Strawberry Compote

The peach compote I made a few weeks ago is finished and it’s time to make another batch.  Today it’s going to be strawberry compote, which is popular one in this family, I’ll be lucky if I get any.  The kids love it on their  crepes, pancakes, waffles, french toast the list is endless.  It never lasts more than a few days no matter how much I make.

Start with fresh strawberries.

Try hard not to eat them yet, hull and wash them.  You’ll need 1lb

Cut strawberries to about 1 inch in size.

Add the zest of one lemon

Place in a saucepan and add 3 tablespoons of sugar.

Add a tablespoon of vanilla.

Mix and place on a medium low heat for 20 minutes.

Set aside to cool.  Strawberries will be soft but intact and liquid will be thick as syrup, I tried to capture how the strawberries should look below.

When cool, store in an airtight container and place in the refrigerator.

Compote should be used within two weeks (this will be really easy).
